Using Chemistry Methods in the Kitchen

We use science everywhere, we just tend not to think about it.  If you like to cook you may wonder why your cake, bread, casserole did not turn out as expected.  In this article Tessa Arias “deconstructs” cupcakes to find out what make a great one.  She uses a control cupcake to test how small changes in flour, fat, baking times and temperatures can result in very different cupcakes.  Being the true cook and nerd that I am, the picture below really enticed me to visit her website.
